This coffee blend combines bourbon and Kent varieties. The cherry is introduced to a sealed tank with a citric acid solution. By controlling the fermentation environment with citric acid, we enhance sensory and flavour profiles compared to regular anaerobic methods. Fermentation is monitored until pH reaches 4-4.2. Then, the coffee is pulped and dried. Initial fast drying is followed by intermittent sun and shade drying until reaching 11% moisture. Finally, the coffee is stored.
